What went well?

Very consistent proofing and mellow taste

What didn't?

I have changed my process to reduce the number of bottoms that get burned, but I'm having trouble keeping a crackly, crisp crust. I will try adding some steam to the oven after I transfer the bread to a wire rack (which happens at 25 minutes into cooking)
