What went well?

Used fresh-milled hard white wheat; ovenspring was better than I expected but this was probably underproofed (it was 95 deg in the kitchen and previous loaves were way overproofed)

What didn't?

I'd halve the recipe (as I usually do), but I was trying to see if there was a difference if you follow the whole recipe as printed.

Other notes

To be honest, I can't tell much difference between fresh-milled flour and the regular whole wheat flour I get from the grocery store :-/
