Much better crumb on this one, more consistent - kitchen was much cooler weather-wise

What didn't?

I think it's underproofed, could have had better ovenspring, but I wasn't going to wait all day

Other notes

Hella crispy crust, a little too crispy for turkey sandwiches? Maybe it'll get soggier in this rainy weather
