bottom didn't burn, crust nice and crispy, ok overspring

What didn't?

crumb was very gluey even though I waited 24h to cut into it - likely very overproofed

Other notes

this used LENNY on its first peak after being fridge-bound for a week. Proofing went well but timing was poor - big bubbles likely due to bad folding too late in the ferment
