What went well?

Came together very easily, I changed the hydration slightly because of the fresh-milled flour and this made it easier to handle

What didn't?

I severely underproofed this one because I was impatient, and because I have never once done the "finger-dent test" and had it give me any useful information.

I am guessing you pulled the mice out of the crumb craters (; I have had similar and I too always think it is impatience and poor judging of starter stage. Thanks for sharing!
