February 29, 2024How long did you soak the seeds before incorporating in the dough?

February 29, 2024 (edited)I soaked the seeds first, then I do the autolyse for 1h and mix the starter and salt with the rest of the dough. I incorporate the seeds on the second slap and fold (or stretch and fold). After 4 rest, stretch & folds, I do the bulk rise which has the seeds fully mixed with the dough. Hope this helps!
