Other notes

Crust is thin and pliant. Crumb is light as expected for white bread, but a touch gummy. Would have liked a bit more oven spring. Baked in a cast iron dutch oven: 15m@500F covered, 10m@450F covered, and 10m@450 uncovered. Final internal temp 209F. Very happy with the result for my first bake in over a year. Baked with Central Milling Organic Artisan Bakers Craft Plus.
