What went well?

Not bad for the first bake from this starter in >6 months.

What didn't?

I started late in the day, and my house was cold so the primary fermentation was insufficient. I also only did 2 folds after laminating, because bedtime. Final proof overnight in the fridge and 3 hours on the counter. Would give more time during primary, another fold, and longer bench rest before baking.
