What went well?

I think the long cold proof really benefited this loaf, the flours really sing!

What didn't?

I used too large of a loaf pan - would either double recipe or use a smaller pan this time. I also think I undershot the bulk ferment, rushing to get out of the kitchen.

Other notes

I baked to a crusty crunch, which is not my thing but my crust loving partner gave high marks. I used whole grain rye instead of spelt
