What went well?

Puffed up nice at the very end!

What didn't?

My first time using a "sweet levain" and I probably should have let it ripen longer.

Other notes

This ended up being a perfect sandwich bread. It's denser than a typical milk bread but still very soft, and has a very light sourdough flavor.
