What went well?

I love this recipe because it's pretty flexible / failproof. I blend 1 cup starter + 1 cup whole wheat flour + 6 cups bread flour + 3 teaspoons salt, and add more flour as needed if the dough is sticky (usually another 1/2 to 1 cup). This makes two ~2lb sandwich loaves and one ~1lb boule. This time I split the boule to make two bread bowls for soup. Turned out a great!

Other notes

I keep toying with folding in fillings when I shape the loaves... cinnamon raison? pesto and sundried tomato? cheese and crushed red pepper? Garlic?
