What went well?

Time effective! Fit into my life. Dough was very wet, handling was tough, but man did the crumb come out great. Kids brought the crust was a bit too crunch for them, but I think it’s what I want.

What didn't?

Initially I would have thought I needed less water but now I think the hydration was perfect. I didn’t let it cool before cutting, and I wish I had done that.

Other notes

The taste was a little…mild. We’ll see how this evening’s second loaf comes out, maybe another 12 hours cold proofing ups the flavor.
