What went well?

Proofed good in a 68 degree kitchen, took total of 9 hours for it to proof, didn't have time for proofing in fridge, I want this for making breading at thanksgiving so doesn't need to be very sour.

What didn't?

Maybe proofed slightly long, having a hard time launching my boule loaves and not losing some structure.
