What went well?
The lamination was easier than I thought it would be, and the result was as intended. Exceeded my very low expectations for an essentially improvised attempt.
I'll use ghee next time (this go round I used a mix of butter and canola). A little bit more salt. I'll need to make things a little less sticky if there's any hope of getting the dough thinner during lamination, but this was still acceptable!
