What went well?
Lotte's first boule was a bit of a disaster. But, despite everything, still tasted pretty good.
What didn't?
The oven was too hot. Most crust is OK, but the bottom was straight up burnt. Because the bake was so fast, the loaf was marginally underbaked. Lotte really isn't vigorous enough either, so, a struggle on the yeast front too. Probably could have used a longer bulk fermentation.
