First ever sourdough loaf and it tasted amazing!

Other notes

I under proofed prior to cold proofing due to low kitchen temperature and running out of time, so the next day I removed from fridge and counter top proofed some more. This resulted in an over proofed loaf. Still very tasty but a bit flat. Next time I will use a thermometer and toggle my oven light.
