What went well?
Really flakey! Tasty tiny sour note.
My pan was too hot and breads were splotchy, I think I need to roll thicker than 1/4".
I wanted to use all of my discard for today, so I scaled everything up 1.36x, which actually gave me exactly 8 pancakes! I like this over King Arthur's scallion pancake, which uses a batter. This is closer to how you would make them. I used an oily salsa verde in place of sesame oil. And instead of scallions, used ramps.
