What went well?

This actually resembles bread! I also learned the slap and fold technique.

What didn't?

I’d use all purpose flour as indicated in the recipe, or maybe try increasing the hydration. The texture was denser than I’d like and also a bit gummy in places.

Amazing stuff! I've accidentally done WW Focaccia before and there's definitely a tradeoff with oven spring, but looks like you got some great results.
