What went well?

Pretty much everything; very excited about how this turned out. The taste was nicely nutty and borderline sweet, with a really pleasant smoothness.

What didn't?

Maybe cranking up the hydration by a smidge. 80% would maybe be too much, but 77% or 78% may work.
