Everything. Bread turned out delicious.

What didn't?

Would probably up the hydration next time. Was worried about the amount of low-gluten flour in this loaf, but it could have handled more water.

Wanted to make my spelt/rye walnut loaf, but didn't have enough rye and spelt flour. Ended up improvising, which turned out great!
