What didn't?

Hydration: would reduce. The loaf was way overhydrated this for what emmer can handle. The loaf kinda pancaked after the fridge proof, so I had to reshape it right before putting it into the oven. Resulting loaf was kind of dense, and the high hydration gave it a very pronounced sourness.
