What went well?

Great bread, amazake adds a nice light sweetness and gives a great browning on the crust

Other notes

The bread on the right was the one with Mantioba flour, it had way more oven spring and was noticeably stronger when I was folding and shaping the breads. I think it could even take a few more percentage hydration, I think i'll use this as my standard white bread from now on!
