What went well?

Was short on all purpose flour so threw in more bread flour and some spelt. Second loaf cold proofed for two nights. I often make 1900g of dough, make into two loaves, and bake one loaf each morning. Fresh bread two days in a row, and second day usually has more interesting flavor. Great by its own, better with salted butter and I admit I enjoy it with a bit of nutella.
