What went well?

Proofing technique worked well with a nice starter! The bake I did with more whole wheat than the recipe rec rose less.

What didn't?

I used “Red Fife” flour from the Greenmarket Grains folks for the whole grain, so a Very coarse, whole-wheat, and it turned out great!

Other notes

You need a Pullman pan or a bread pan, this recipe is fairly liquid / sticky, so as a boule it is super flat- do not attempt a boule with these ratios!
